UW River Falls students create calming curd, get national recognition

Joanna Guza talked with Dr. Grace Lewis, assistant professor at UW River Falls, about the winning entry in the 2023 DMI’s New Product Development Competition. Students from UW River Falls developed the “Root Curd” that was dairy-based with calming properties. Dr. Lewis shares more about the competition, the entry, judge processing, challenges and the future of dairy innovation.
