APPLETON, WI (WTAQ) – A Fox Valley cooking enthusiast offers some tips for what to do with that leftover turkey in the fridge.
Jim Fett is with Williams-Sonoma in the Fox River Mall.
“Turkey carcass soup, where you take the carcass and everything and you put it into a pot with water. You sautee onions and celery and all that good stuff. You can add rice or you can make it with dumplings.”
Fett suggests an alternative.
“Make a turkey pot pie, you make a roux with butter and flour for your base sauce with it. You can add peas and carrots and all that. Then put a crust on top, made out of butter and flour.”
He notes there is also a way folks can spruce up their turkey sandwiches.
“I make kind of like a relish with cranberries, horseradish, mayo, and onions. It makes a really great kind of mayo topping.”
Fett advises people to freeze any leftovers that they don’t plan on eating within a week.
