A bill to make Colby cheese the official state cheese of Wisconsin has been re-introduced. The conversation started late last week with the Assembly Committee on Local Government. Lawmakers say that naming an official state cheese would help to celebrate the history America’s Dairyland has with cheesemakers.
If the bill is approved, Colby cheese would be added to the Wisconsin Blue Book, which includes a list of all state symbols.
