Sharilyn's Lime Ginger Marinade!

 

Last week I mentioned on the air I was running out of grilling ideas. So, I did an impromptu contest. I asked listeners to share recipes for the grill with me and if I used theirs I'd come up with a prize. Here's her recipe:

Lime-Ginger Marinade

This is a great marinade for Chicken, Shrimp, or Fish.  Very easy too!

2 T. Grated Fresh Ginger

1 T. Fresh Garlic

½ cup Fresh Lime Juice

1 cup Olive Oil

 

My entire family gave this a huge thumbs up. We served it with rice pilaf and green beans. A few points. I had the chicken breasts in the marinade about two hours. Sharilyn didn't give a suggested time, but I'd go at least three. The shrimp absorbed the flavor much more than the chicken did. It could also be that it just works better with shrimp, but I'd go longer than two hours. The pilaf and green beans were a perfect complement.

The ginger, garlic and lime all work together to give the meat quite a tangy flavor. I'll confess, I picked this as the winner mostly because it was among the easiest to prepare and I had a very busy weekend. But it really is quite good.
